Iftar meal: How to cook Masala Lamb Chops

A few days ago I made masala lamb chops with roast potatoes and veg. As a starter I made a smoothie from a variety of fruits including apple, banana, nectarine and fresh mango juice added in. I will be writing a smoothie recipe in a future post, but for now let me show you how to cook the food!

Start off with lamb chops which you will need to marinate. I bought pre-marinated masala chops from a halal Asda meat counter. This saves time and I think the marinade is delicious! Check out your local Asda to see if they offer this. **A word of warning if you're not a fan of spicy food beware that the Asda chops are very hot. It may be best to marinate yourself to control the amount of chili**

There are many ways you can prepare your own sauce. For one simple recipe follow below:

tomato puree
yoghurt
coriander powder and fresh coriander for garnish
red-chili powder (your preference)
crushed garlic and ginger
salt to taste
1-2 tbsps of garaam masala
1 tbsp oil and lemon juice

Add the chops to the mixture, cover with cling film and place in the fridge. It would be best to leave overnight to allow the meat to absorb the juices and create extra tasty chops!

Place the chops into a baking tray and then you can add veg of your choice.

I have added peas and carrots which work well with the meat. Mix together, then place tin foil on top and cook in the oven on medium heat for around 45 minutes.

I decided to also make my favourite-roast potatoes! I always enjoy these potatoes on a Sunday as part of a roast dinner. Mixed with oil, sea salt and cloves of garlic they are extra delicious and healthy!

I will be making a separate post on how to cook roast potatoes :)

Homemade fruit smoothie for starter
I've been having a fruit smoothie before my meal for iftar and inshallah I hope to continue this throughout Ramadan.

I inshallah hope to continue with the food posts throughout ramadan :)

Please let me know what you like to have for iftar?
